When making a wedding cake, do I freeze the cake before or after icing?

Definitely freeze before icing. You may also want to freeze it briefly after icing and before transporting (especially in hot or humid climates) then transfer immediately to an air-conditioned vehicle and away from direct sunlight. Everyone so far is right! You freeze the cake prior to icing it to (1) keep it from ';crumbing'; in the icing, and to (2) seal in the freshness of the cake. A fresh cake that's iced while still frozen seems to stay moister...longer.
If you freeze the cake before it is iced, it's firmer and easier to ice.

Just don't freeze it for too long or it will crack the icing. Makes it easier to handle while decorating and shoul set out for about 45 minutes before decorating.

if u like the iceing cold and hard do it before,if u like itsoft and mushy than do it after.
